Original Bircher muesli, the Dr. Bircher way
Rolled oats soaked overnight in water with lemon juice, mixed with grated apple, condensed milk, and hazelnuts. The original recipe from 1900. Quiet and perfect.
Bircher muesli was invented in 1900 by Swiss-German physician Dr. Maximilian Bircher-Benner as a health food for tuberculosis patients at his Zurich clinic. The original is nothing like the modern yogurt-heavy bowls most people know. It uses sweetened condensed milk and lemon juice as the base, soaked oats, grated apple (skin on, with seeds), and crushed hazelnuts. The lemon juice keeps the apple from browning and adds a faint tang that balances the sweetness. This is the recipe as Bircher-Benner wrote it, almost a hundred and twenty-five years ago. It still works perfectly.

Method
Soak overnight.
Soak rolled oats in cold water with lemon juice for at least 8 hours (or overnight) in the refrigerator. The oats should absorb almost all the liquid and become very soft.
Combine in the morning.
Grate the apples directly into the soaked oats. Add condensed milk and stir well to combine. The apple releases juice that loosens the mixture.
Serve.
Divide into bowls. Scatter toasted hazelnuts on top. Eat cold, immediately.

- How is this different from modern Bircher muesli?
- Modern versions are mostly yogurt, less apple, often with berries or banana. Bircher-Benner's original used condensed milk (no yogurt), grated apple as the main ingredient, and lemon juice. Lighter, less sweet, more refreshing.
- Can I use yogurt instead of condensed milk?
- Yes, substitute 80g of full-fat Greek yogurt + 1 tablespoon honey. It is less authentic but more common today. Both versions are good.
- Why grate the apple, not chop it?
- Grating releases moisture, which loosens the soaked oats and integrates flavour throughout. Chopped apple stays as separate bites. Bircher-Benner specifically wrote "fein gerieben", finely grated.
- Do I have to soak the oats overnight?
- 8 hours is recommended for the original. The oats need to soften without cooking. If you're in a rush, 30 minutes at room temperature gives a chewier but still good result.
- Is this gluten-free?
- Yes if you use certified gluten-free oats. Pure oats are naturally GF; most commercial brands are processed in facilities with wheat. The rest of the recipe contains no gluten.
