Honey-cardamom morning milk
A warming drink with wild honey and toasted cardamom. The kind of cup that slows a morning down.

Method

Crush the cardamom.
Lightly crush the cardamom pods with the side of a knife or in a mortar. You want them cracked open, not pulverized.

Warm and infuse.
Add the milk and crushed cardamom to a small saucepan over low heat. Warm slowly until steaming โ do not boil. Remove from heat and steep for 5 minutes.
Note. The longer you steep, the more aromatic it gets. Up to 10 minutes is wonderful.

Strain and sweeten.
Strain through a fine sieve into two cups. Stir in the honey and vanilla. Taste and add more honey if you like.

Finish and serve.
Dust a pinch of cinnamon on top of each cup. Serve immediately while warm.
