Honey-cardamom morning milk
A warming drink with wild honey and toasted cardamom. The kind of cup that slows a morning down.
In India this is the cup that ends the day and starts another. Whole milk infused slowly with crushed green cardamom, sweetened with raw honey, finished with a dust of cinnamon. The technique matters more than the ingredients: do not boil the milk, warm it until steaming, then steep. Boiling makes the cardamom turn bitter and stips the milk of sweetness. Five quiet minutes on low heat, five more to steep, and you have a drink that feels like it took thirty. It is a morning drink in some homes, a bedtime drink in others. Either way, it slows you down in the right way.

Method
Crush the cardamom.
Lightly crush the cardamom pods with the side of a knife or in a mortar. You want them cracked open, not pulverized.
Warm and infuse.
Add the milk and crushed cardamom to a small saucepan over low heat. Warm slowly until steaming — do not boil. Remove from heat and steep for 5 minutes.
Strain and sweeten.
Strain through a fine sieve into two cups. Stir in the honey and vanilla. Taste and add more honey if you like.
Finish and serve.
Dust a pinch of cinnamon on top of each cup. Serve immediately while warm.

- Yes. Oat milk and almond milk both work well, choose the unsweetened, unflavored versions. Coconut milk is too dominant; it competes with the cardamom rather than letting it lead.

- Can I use ground cardamom instead of pods?
- You can, but the flavor is less alive. Pods release essential oils slowly; ground cardamom oxidizes the moment the container opens. If you must use ground, add ¼ teaspoon and skip the straining step.

- How long does this keep?
- Best the day it is made. You can refrigerate the strained milk for up to 2 days and reheat gently, but the aromatics fade fast, so fresh is always better.
