Agua de panela con queso
Unrefined sugarcane dissolved in hot water — Colombia's oldest morning drink. Served with a chunk of fresh cheese for dipping.
Agua de panela is one of Colombia's most overlooked breakfast drinks, a simple hot infusion of panela (unrefined cane sugar) and water, sometimes with cinnamon or lime. It sounds plain, but the flavour is surprisingly deep: panela has the molasses, minerals, and earthy notes that refined sugar loses. Colombians drink it hot in the morning (with a chunk of queso fresco dunked in for the melt), cold in the afternoon (with lime, as limonada de panela), and warm with hot chocolate at night. Two minutes of work, almost no ingredients, and a drink that tastes specifically of rural Colombia.

Method
Dissolve the panela.
Break the panela into pieces. Combine with water and cinnamon (if using) in a small saucepan. Heat over medium, stirring occasionally, until fully dissolved.
Simmer and serve.
Bring to a gentle simmer for 3–5 minutes. Taste — it should be sweet, with a warm, earthy molasses note. Pour into mugs and serve with a chunk of fresh white cheese for dipping.
Frequently asked questions
- What is panela?
- Solidified unrefined sugarcane juice, basically what sugar was before industrial refining. Sold in blocks, cones, or bricks. Other names: piloncillo (Mexico), rapadura (Brazil), jaggery (India), muscovado (Caribbean). All similar products.
- Can I substitute brown sugar?
- It works as a fallback, use 60g brown sugar + 1 tablespoon molasses to mimic the depth. The flavor isn't identical (brown sugar lacks the earthy minerals), but it's close enough.
- Why is it served with cheese?
- Colombian tradition. The cheese (queso fresco, salty and slightly tangy) is dunked into the hot drink, it softens slightly and contrasts with the sweet panela. The salt-sweet combination is the entire point.
- Is agua de panela healthy?
- It's essentially sugar water, about 100 calories per cup, low in any other nutrients. Panela retains some minerals (iron, calcium) that refined sugar loses, but it's still mostly sucrose. A warm comfort drink, not a health food.
- Can I drink it cold?
- Yes, limonada de panela is the cold version: agua de panela chilled, with lime juice. Excellent in summer. Same ingredients, different serving temperature.
